- cups rotisserie chicken, shredded as finely as possible
- ½ cup grated carrot
- ⅓ cup pitted green olives, chopped
- ¼ cup chopped celery stalks
- ¼ teaspoon minced parsley
- ¼ cup finely chopped leek, or chive, divided
- 1 cup cream cheese, at room temperature
- ½ cup heavy cream, or evaporated milk
- ½ cup mayonnaise
- 1½ tablespoons onion powder
- 1½ teaspoons paprika
- 1 teaspoon freshly cracked pepper
- 1 teaspoon salt, or more, to tast

1. Combining
In a large bowl, mix chicken, carrot, olive, celery, ¾ of the leek (save ¼ for garnish), and cream cheese. Stir to combine well.Add the milk or cream, and mix well. Add the mayonnaise and combine.Season with onion powder, pepper, paprika, pepper, and salt to taste.
2. Serving and storage
Serve immediately, or refrigerate covered for up to 8 hours.Garnish with the rest of the leeks before serving.
