Ingredients

  • cups rotisserie chicken, shredded as finely as possible
  • ½ cup grated carrot
  • ⅓ cup pitted green olives, chopped
  • ¼ cup chopped celery stalks
  • ¼ teaspoon minced parsley
  • ¼ cup finely chopped leek, or chive, divided
  • 1 cup cream cheese, at room temperature
  • ½ cup heavy cream, or evaporated milk
  • ½ cup mayonnaise
  • 1½ tablespoons onion powder
  • 1½ teaspoons paprika
  • 1 teaspoon freshly cracked pepper
  • 1 teaspoon salt, or more, to tast

1. Combining

  • Combining ingredients.
    In a large bowl, mix chicken, carrot, olive, celery, ¾ of the leek (save ¼ for garnish), and cream cheese. Stir to combine well.
    Add the milk or cream, and mix well. Add the mayonnaise and combine.
    Season with onion powder, pepper, paprika, pepper, and salt to taste.

2. Serving and storage

  • Cream cheese and chicken dip.
    Serve immediately, or refrigerate covered for up to 8 hours.
    Garnish with the rest of the leeks before serving.

Top tips

  • Consistency and texture: The trick to this creamy spread is to shred the chicken well so that there are no long strands.
  • Resting: Although you can serve it in a few minutes, the flavors deepen if left to rest (refrigerated), and is perfect for cookouts and potlucks.
  • Spicy: You can add chili powder to make it spicy if you like the taste.
  • Chicken: You can also use any kind of boneless skinless chicken breasts leftover you have. Leftover tender chicken thighs also work well.
  • Asparagus: I love adding chopped blanched white asparagus sometimes for extra flavor and nutrition.
  • Celery: If you do not like the taste of celery, you can use sweet corn instead.
  • Other ingredients: Another great of serving this dish is by mixing it with a cup of Colby jack cheese and half a cup of ranch dressing, then spread it in a baking dish, sprinkle with half a cup of cheddar cheese, and broil in the oven until the cheese has bubbled and turned lightly golden brown.

    If you have bacon bits, spread some on it before serving.

Serving suggestions

This chicken and cream cheese dip can be made with a breast and is perfect for serving with tortilla chips, yuca fries, toasted pita chips, sweet potato fries, tostones, or any of your favorite fritters.

You can also use this dip as a sandwich filling for a light lunch or dinner.
