This cabbage soup is an extraordinary dish: flavorful, filling, and very comforting. I love it on cold, crisp days, and if you make extra, you'll find it's the perfect soup to reheat the next day.

Why we ❤️ it

  • If you know me, you know I can't resist soup, and on cool or cold days, this delicious cabbage soup is one I make whenever I can.
  • My cabbage soup is creamy, with the lovely color of paprika, the nutritional benefits of the vegetables, and the rich flavor of the sausage.
  • The flavors mature and intensify if you save it for the next day-I always enjoy the leftovers.

Utensils and tools

  • Medium pot

Ingredients

  • 1 tablespoon olive oil
  • ¾ pound kielbasa, or other beef sausage [350 grams], sliced
  • 1 white onion, finely chopped
  • 2 stalks leek, sliced
  • 2 cloves garlic, crushed
  • 4 starchy potatoes, finely chopped
  • 1 teaspoon sweet paprika
  • 6 cups vegetable broth, [1.5 liters]
  • ¼ teaspoon black pepper, freshly ground
  • 1½ teaspoons salt, (or more, to taste)
  • ¼ head cabbage, sliced
  • 1½ cups whipping cream, (optional)
  • 4 sprigs parsley, (or 1 sprig of chopped dill)

Preparation

1. Brown sausage

  • Heat the oil in a pot over medium heat.
Once hot, add the sausage and cook, stirring, until browned.

2. Sautee vegetables

  • Add the onion, leek, and garlic, and cook, stirring, until they begin to turn translucent.
Add the potatoes and paprika, and cook, stirring, until heated through.

3. Boil

  • Add the broth. Season with salt and pepper to taste.
Simmer, covered, for 15 minutes, or until the potatoes are tender.

4. Cook cabbage

  • Add the broth. Season with salt and pepper to taste.
Simmer, covered, for 15 minutes, or until the potatoes are tender.

5. Serve

  • Taste and season with salt and pepper if needed.
Stir in the parsley and serve.

Top tips

  • Storing: Store the soup in the refrigerator and reheat it the next day. Don't boil it for too long so the cabbage retains as much crunch as possible.
  • Sausage type: For this soup, my favorite sausage is kielbasa, a Polish beef sausage, but it works very well with longaniza, or any mild beef or pork sausage.
  • Broths: You can use chicken broth if you have it on hand.
  • Lighter version: For a lighter version, you can substitute the beef sausage for chicken or turkey sausage and omit the heavy cream.

Serving suggestions

To make this a complete meal, you can serve it with some rustic bread or a baguette.
