- 1 tablespoon olive oil
- ¾ pound kielbasa, or other beef sausage [350 grams], sliced
- 1 white onion, finely chopped
- 2 stalks leek, sliced
- 2 cloves garlic, crushed
- 4 starchy potatoes, finely chopped
- 1 teaspoon sweet paprika
- 6 cups vegetable broth, [1.5 liters]
- ¼ teaspoon black pepper, freshly ground
- 1½ teaspoons salt, (or more, to taste)
- ¼ head cabbage, sliced
- 1½ cups whipping cream, (optional)
- 4 sprigs parsley, (or 1 sprig of chopped dill)
Preparation
1. Brown sausage
- Heat the oil in a pot over medium heat.Once hot, add the sausage and cook, stirring, until browned.
2. Sautee vegetables
- Add the onion, leek, and garlic, and cook, stirring, until they begin to turn translucent.Add the potatoes and paprika, and cook, stirring, until heated through.
3. Boil
- Add the broth. Season with salt and pepper to taste.Simmer, covered, for 15 minutes, or until the potatoes are tender.
4. Cook cabbage

Top tips

- Sausage type: For this soup, my favorite sausage is kielbasa, a Polish beef sausage, but it works very well with longaniza, or any mild beef or pork sausage.

- Lighter version: For a lighter version, you can substitute the beef sausage for chicken or turkey sausage and omit the heavy cream.
