The trick for these is that the layer of cheese serves as a barrier between the juicy chicken, and the cracker, so the latter doesn't get soggy. The spicy cheese also adds a lot of flavor to it.

Chicken cracker topping
- 3 tablespoons olive oil
- 1 rotisserie chicken breast, shredded
- 4 cloves of garlic
- 1 small red onion, minced
- 1 red bell pepper, minced
- ½ teaspoon dry oregano
- ¼ cup of tomato sauce
- 1 tablespoon minced fresh basil, parsley, or cilantro (whichever you prefer)
- 2 sprigs parsley, plus extra, minced, for garnish
- 2 teaspoons of salt, (or more, to taste), divided
- ¼ teaspoon freshly-cracked black pepper
- 3 slices pepper jack cheese
- 1 dozen crackers
- ¼ cup of thick sour cream
Avocado and bacon cracker topping
- ¼ pound [0.11 Kg] bacon
- 1 small red onion
- 1 plum tomato
- 1 avocado
- ¼ teaspoon freshly-cracked black pepper
- ½ teaspoon salt, (or more, to taste)
- Juice of 1 lime or lemon juice
- 1 dozen crackers
- ¼ pound [0.11 Kg] of queso blanco cheese, crumbled
- Cilantro, to garnish
Preparation
Before starting, please make sure you have all the ingredients and utensils ready.
To make the chicken cracker toppings
Step 1: SautƩe
In a skillet, heat the oil over medium heat. Add the shredded chicken, garlic, onion, and bell pepper and cook, stirring, until the onions and bell peppers are soft and cooked through.
Add oregano and pour in the tomato sauce and parsley, and cook, stirring until everything is heated. Season with salt and pepper to taste.
Step 2: Cutting cheese
Using a cookie cutter, cut the cheese into 12 small circles (about the size of the crackers); if you don't have a cookie cutter, just cut the cheese into squares.
Step 3: Serving
Arrange chicken, cheese, crackers, parsley, and sour cream on a tray. Right before eating, assemble by placing cheese on a cracker, topping with chicken, followed by a small dollop of sour cream, and sprinkle with parsley.
The cheese will prevent the cracker from becoming soggy with the chicken juices but it is best not to pre-assemble it.
To make the avocado cracker toppings
Step 1: Fry the bacon
Chop the bacon into ½" [1.5 cm] pieces. Place the bacon in a microwave-safe container, and cover it with plastic film. Cook for 5 minutes.
Remove from the container, and place on a paper towel to absorb excess grease. Alternatively, you can fry it in a pan.
Step 2: Prepare avocado
Dice the onion and the tomato. Peel and chop the avocado. Mix with the onion and tomato.
Season with pepper, salt, and lime juice to taste. Chill.
Step 3: Serve
Serve avocado alongside crackers, bacon, and cheese. When serving, top the crackers with the avocado, top with bacon or cheese, and garnish with cilantro.
Top tips
- If you serve them to kids you can tone down the spiciness, or up it for grown-ups who love spicy food.
- You can use cream cheese instead of ricotta; it makes a great combination with spicy chicken.
- For vegans, make a version of the avocado toppings topped with some minced tomato or olives instead of bacon.
