Why I ā¤ļø it

Do you miss pasta? Make this garlicky zucchini noodles with shrimp recipe to cut out processed carbs. Zucchini noodles, often called zoodles, are a low-calorie, low-carbohydrate alternative to traditional pasta.  You'll love a steaming plate of garlicky shrimp on a bed of healthful zoodles, and you don't even need to own a spiralizer to make it.

This is a recipe that diabetics and people on low-carb diets will love. It's like a plateful of very tasty pasta, but without the guilt. Zoodles (zucchini noodles) is one of my favorite pasta substitutes. And if you're looking for other great zoodle recipes, don't miss this cold Asian zucchini noodles salad.

Top tips

  • You can also use a spiralizer, or julienne peeler to make making vegetable noodles a piece of cake.
  • If you want to add an extra layer of flavor, also sprinkle with a tiny amount of lemon zest.

Serving suggestions

You don't need salad (plenty of greens in it), but some sliced tomato and arugula drizzled with olive oil, balsamic vinegar, and shaved parmesan cheese go great with it, should you choose to serve a salad.

Variations

Of course, you can make this with actual pasta; spaghettini works best with it, just boil according to the instructions on the package and add to the dish instead of zoodles.

If you want to try another shrimp recipe, this shrimp on Blackstone is also worth cooking.
