Why I ā¤ļø it
This is almost breakfast-worthy, which makes it a great little treat for fuzzy kids in the summertime and a way to make them eat a healthy snack and even come back for more.
This dairy-free popsicles recipe is more of an idea than, so I give you several recipe variations so you can adapt it to your taste or what you have at hand. You can also add other fruits if you are feeling adventurous.

Utensils and tools
Ingredients
- 1 cup steel-cut oats, (see notes)
- ½ pound [250 g] of fresh strawberries
- 1 tablespoon vanilla extract
- ā cup sugar (white, granulated), or to taste (see notes)
Preparation
Before you start, make sure you have all the ingredients and utensils ready.
Step 1: Make oat milk
Blend the oats and 2 cups of water in a blender until the oats are dissolved (about 5 minutes at high speed).
You can sieve to remove solids with a fine-mesh strainer.
Step 2: Combine ingredients
Return the oat milk to the blender and add the remaining ingredients. Blend until the mixture has turned pink, leaving some small pieces of strawberry.
Step 3: Freeze
Pour into popsicle molds, add the sticks, and leave in the freezer until they set.
To remove them from the mold, dip them in lukewarm water for a couple of seconds to loosen the popsicles.
Top tips
- While oats are naturally gluten-free, it may be challenging to find oats that have not been contaminated. You can use coconut milk or almond milk instead.
- Substitute sweetener to taste (like agave or maple syrup) for sugar.
- If you just have instant oats, you can also use it but may need to use about half as it dissolves faster into the milk. This isn't necessarily an exact recipe, adjust things to your own taste as you go along.
- If you don't find fresh strawberries, use frozen strawberries, you do not need to thaw them.
Variations
I'll be making these oats and strawberry popsicles more often, possibly trying it with other berries and stone fruits (bananas, peaches or cherry flavor sound like a winner too).

Hi, I make steel cut oats for breakfast often, they are pretty crunchy, hard and I would think a bit hard to digest if not cooked first. Are you using raw, cooked or some version of quick cook ones in this recipe. Iād love to make them but am a bit confused. Thanks so much for any clarification.

Raw. We also use it in another traditional drink (jugo de avena), never had any problems.
