There's no better summertime dessert than popsicles, and this vanilla and chocolate popsicles recipe will prove that. They are creamy and rich, like eating a frozen pudding, and the mixture of flavors works wonderfully together.

Utensils and tools
Ingredients
- 1 cup evaporated milk, at room temperature
- 3 tablespoons unsweetened cocoa powder,
- ¼ cup condensed milk, (or to taste)
- 1 teaspoon dark vanilla extract
- 1 teaspoon Xantham gum, (optional)
- Chocolate syrup, to garnish
Preparation
1. Combine
- In a mixing bowl, combine evaporated milk, cocoa powder, condensed milk, vanilla extract, and Xantham gum.Whisk until everything is mixed well and taste to see if it needs more sweetness, and add more condensed milk to taste.⚠️ If the Xantham gum does not dissolve completely, you can process the mixture in a blender.
2. Pour into molds
- Pour in lines of chocolate syrup into four popsicle molds, then pour the milk mixture into the popsicle molds, and place the popsicle sticks.
3. Freeze
- Keep in the freezer until the popsicles set (three to four hours).
Top tips
- Vegan version: Substitute condensed milk and evaporated milk for oat milk, adding more sugar to taste. Add an extra pinch of xanthan gum to make them just as creamy.
- To remove from the mold: Dip the mold in lukewarm water for a couple of seconds.
- Best molds: Use molds with smooth sides; these popsicles were a bit harder to remove from the molds when I used the ridged molds.
- Why use xantham gum: Adding a teaspoon of xantham gum to the mixture helps to make them much more creamy and prevents the formation of crystals. Xantham gum is a natural thickening powder popular in keto and gluten-free baking.
- No chocolate syrup? Instead of drizzling with chocolate syrup, you can add chocolate chips to the chocolate popsicles instead.
- Peanuts: Another great way of serving it is to coat it with minced roasted peanuts or sugar sprinkles after removing it from the mold.
