If you feel like making some homemade chocolate popsicles, these vanilla and chocolate popsicles are incredibly creamy, as creamy as any store-bought popsicle you can find, but made at home, where you can enjoy them any time you want.
These lovely frozen treats are also very easy and quick to make, are gluten-free, and can be adapted to a vegan diet. The perfect ice pops for a hot summer day.

- Popsicle mold
- Wooden popsicle sticks
Ingredients
For the chocolate popsicles
- 1 cup evaporated milk at room temperature
- 3 tablespoons cocoa powder (unsweetened)
- ¼ cup condensed milk (or to taste)
- 1 teaspoon of dark vanilla extract
- 1 teaspoon of Xantham gum (optional)
- Chocolate syrup to garnish
Preparation
Before you start, make sure you have all the ingredients and utensils ready.
Step 1: Combine
In a mixing bowl, combine evaporated milk, cocoa powder, condensed milk, vanilla extract, and Xantham gum. Whisk until everything is mixed well and taste to see if it needs more sweetness, and add more condensed milk to taste.
If the Xantham gum does not dissolve completely, you can process the mixture in a blender.
Step 2: Pour into molds
Pour in lines of chocolate syrup into four popsicle molds, then pour the milk mixture into the popsicle molds, and place the popsicle sticks.
Step 3: Freeze
Keep in the freezer until the popsicles set.
Top tips
- To remove from the mold, dip the mold in lukewarm water for a couple of seconds.
- Use molds with smooth sides; these popsicles were a bit harder to remove from the molds when I used the ridged molds.
- Adding a teaspoon of Xantham gum to the mixture helps to make them much more creamy and prevents the formation of crystals. Xantham gum is a natural thickening powder popular in keto and gluten-free baking.
Variations
For a vegan version, substitute almond milk and sugar to taste for condensed milk. Oatmeal milk would work fine too.
Instead of drizzling with chocolate syrup, you can add chocolate chips to the chocolate popsicles instead.
Another great way of serving it is to coat it with minced roasted peanuts or sugar sprinkles after removing it from the mold.
