Summer's here, and it's time for my favorite summer dessert: popsicles. Check my favorite easy popsicle recipes here, and you will find one every family member will love. Kids will love some homemade fruit popsicles, and grownups will find something special for them too.

Sweet potatoes, you say? Yes, indeed, sweet potatoes are great in desserts too, and in this lovely popsicle sweet potato adds so much creaminess it makes it one of my favorites, and combined with coconut is it's so much better.

You'll be surprised to hear of a dessert with beans but fear not, they are not so uncommon, and sweet cream of beans is a very popular Lenten dish in the Dominican Republic.
12. Barbados cherry popsicles
Barbados cherry, acerola, or Dominican cherry is a native Caribbean fruit that looks similar to typical cherries but they are unrelated. It's my favorite fruit; curiously, they taste like a mix of cherries and lime. Great in juices and desserts, I also love them in popsicles.
