- ½ cup ketchup
- ½ tablespoon garlic salt or onion salt
- ½ teaspoon chili flakes
- ¼ cup brown sugar
- 1 cup golden rum
- 2 tablespoons smoke liquid, (optional)

Before you start, make sure you have all the ingredients and utensils ready.
Step 1: Making the sauce
Mix all the ingredients for the sauce. It should be a thick sauce, but if it turns out too liquid (it depends on the tomato sauce you use), heat over medium heat to reduce it to desired consistency, and constantly stir to prevent it from sticking and burning.
Step 2: Serving
Serve alongside BBQ meats, or brush on the meat before grilling to caramelize and deepen the flavors.
Top tips
- The liquid smoke gives a very special flavor to the ribs, but if you can't buy it, then you can try without it.
- I normally use dark rum for the sauce but have also used white in a pinch, and I liked both. Use the rum you have at hand.
- For the authentic Caribbean flavor, use one crushed Scotch bonnet pepper instead of chili flakes.
- You can use ¼ cup of tomato paste dissolved in ¼ cup of water and mixed with 1 teaspoon of brown cane sugar instead of ketchup.
- The liquid smoke gives it a pleasant smokey taste and a beautiful caramel color.
