Ingredients
- 1 libra de pimientos dulces
- 4 pimientos cubanos
- 4 cebollas grandes
- 2 manojos de cilantro fresco
- 3 dientes de ajo
- 2 cucharadas de hojas frescas de orégano
- 1 cucharadita de sal
- ¼ taza de aceite vegetal

Preparation
1. Grind the spices
In a spice grinder or mortar, combine salt, cumin, caraway seeds, and black pepper, and grind to pulverize them.
2. Blend the hot sauce
Pour the spice mixture into the food processor vase and add the jalapeño, garlic, lemon juice, cilantro and parsley.Pulse to turn into a coarse paste, it's important that it's not blended completely.
3. Mix in olive oil
Add the olive oil and pulse once or twice to combine.
4. Store
Pour into a mason jar and keep in the refrigerator for up to a week.
Top tips
- Liquid smokes: The liquid smoke gives a very special flavor to the ribs, but if you can't buy it, then you can try without it.
The liquid smoke gives it a pleasant smokey taste and a beautiful caramel color. - Rum: I normally use dark rum for the sauce but have also used white in a pinch, and I liked both. Use the rum you have at hand.
- Pepper: For the authentic Caribbean flavor, use one crushed Scotch bonnet pepper instead of chili flakes.
- Tomato paste: You can use ¼ cup of tomato paste dissolved in ¼ cup of water and mixed with 1 teaspoon of brown cane sugar instead of ketchup.
