Why I ā¤ļø it
At home, I am always searching for "the next great dish", that one that we like so much it has become part of our family tradition. These breaded fried turkey chops with bone may very well become one with its flavorful mix of spices.
What turkey offers is a flavor and texture similar to red meat, and the nutritional properties of white meat. The best of two worlds. They make a great alternative to pork chops and the perfect weeknight dinner. This is one of my favorite turkey recipes.

Utensils and tools
Ingredients
- 2 cups of breadcrumbs or panko
- ½ tablespoon salt
- ¼ tablespoon freshly ground black pepper
- 1 tablespoon garlic powder
- 1 tablespoon of onion powder
- 8 slices of turkey legs, clean of small bones (see notes)
- 4 eggs (large), whisked
- 1 cup of all-purpose flour
- ¼ cup of vegetable oil or ghee (clarified butter) at room temperature
- Lemon or lime wedges, for garnishing (optional)

Preparation
Before starting, please make sure you have all the ingredients and utensils ready.
Step 1: Making breadcrumb mixture
In a large mixing bowl, combine panko, salt, pepper, garlic powder, and onion powder and stir to combine.
Step 2: Breading
Cover the turkey chops with flour and shake off the excess. Drench each turkey chop in the egg wash (use tongs to dip them into the egg). Cover them with the breadcrumbs.
Set them aside.
Step 3: Frying
Heat the oil in a skillet or pan over medium-high heat. Place turkey chops in the hot pan in a single layer (you may need to do it in batches) and cook until they turn golden brown on the cooking side. Using tongs, flip and cook the other side (4 minutes on each side).
Remove the turkey from the pan and place it on paper towels to remove excess oil. Repeat the process with the remaining butter and chops until they are all cooked. Serve them.
Top tips
- Once you have thawed the chops and before cooking, press on them with your fingers to find and remove any pieces of bone or cartilage.
- Olive oil, while my prefer cooking fat, does not work as well in this recipe because it has a low smoking point and will burn before you can even sear the chops.
- Using a non-stick pan reduces the amount of fat needed.
Serving suggestions
Serve on mashed potatoes, or oven-fried potatoes, and if you want to drizzle with a sauce, you'll love this guava BBQ sauce, this copycat Popeyes sweet heat sauce, or your preferred BBQ sauce.

Variations
You can make this recipe with turkey breast cutlets, or chicken cutlets (sliced chicken breast) following the same method, but bear in mind that the cooking time in a turkey cutlet recipe would be shorter as white meat (breast) cooks faster than leg meat.

Well, the above menu inspired me.
Malawi only ever imports American turkey for the few American folk here at Thanks Giving and Christmas being the only time people buy Turkey here. This being almost April the butcherat Shoprite had to sell his late delivered excess stock. I think they did not sell any where near anticipated sales. He must have selected pieces and offered them in cut tray sections. The drum sticks sliced into chops attracted me.
Christmas lunch is traditionally Turkey done in the Weber. This was different.
Soaked in some rosemary, salt and pepper with olive oil for an hour or three then crumbed in a packet (with egg as normal) of bought Robertson Gold and crispy crumbs 'aromat flavoured' and fried at medium heat in sunflower oil made them golden tender crisp and delish. I served with mash and peas with oodles of Bisto gravy made from the the fry and what a nice dish it was. Amazing though, one large turkey drum stick served four with ease. so if you see turkey chops on offer. Enjoy!
