Utensils and tools
Ingredients
- 2 tablespoons oil for frying
- 2 pound beef bones, [0.9 kg] any type would do
- 1 head garlic, cut into halves
- 2 red onion, halved
- bunch cilantro
- 2 sprigs parsley, optional
- 3 springs fresh oregano, (or 2 teaspoons of dry ground oregano)
- 1 tablespoon allspice berries
- ½ tablespoon peppercorns
- 1 lime, or lemon (opcional)

Preparation
1. Browning bones
In a large pot heat the oil over medium-high heat.Brown the beef being careful that it does not burn.
2. Adding herbs and spices
Reduce the heat and add ½ gl [2 l] of water.Add the garlic, onion, cilantro, parsley, chili pepper, pepper, and oregano. Add the juice of the lime.
3. Simmering
Cook over low heat for three hours.Once the three hours have passed, remove from heat and let cool to room temperature.
3. Sieving
Sieve with a fine-mesh sieve and remove the solids.
4. Storing
Divide into one-cup portions and refrigerate or freeze.
Top tips
- Remove excess fat: While I don't, and use the fat in the broth to add flavor to my dishes, you can skim the fat from the stock once you refrigerate it.
- Herbs: You can more herbs, you wish. Some sprigs of thyme and/or rosemary and a a couple of laurel leaves add some extra wonderful flavors.
- Seasonings: Be free to add some extra spices if you want.
- Adding more vegs: You can save bits and pieces of vegetables to add to the broth, like tomato, carrot, celery, spring onions, etc. I even add red onion peel to give it a more intense color.
- Salt: I don't add salt to the broth, as it would be more difficult to control the salt in the recipe in which it will be used later. Add salt to taste as required for your intended use.
Serving suggestions
You can use the broth on its own for a nutritious meal or snack when your health requires it, but it's also perfect for storing in the refrigerator and adding flavor to other dishes.
You can also use it to add flavor to soups and broths, and to rice. Here are some dishes I use it in. It's also perfect for serving with a delicious dish of mofongo.
