Why I ❤️ it

You'll love the taste of these three Hispanic and Latino classics: Cuban mojito, Spanish Sangría, and Puerto Rican Piña Colada, now in popsicle form.

Is there a better summer treat than popsicles? I don't think so. And now you can add a touch of alcohol for cocktail pops grownups will love, or leave it out so kids can enjoy these summer treats too. Either way, it'll be a refreshing summer treat everyone will love.

Ingredients

Sangría popsicles

  • ⅓ cup of diced fruit, (I used apple, grapes, and strawberries)
  • 4 tablespoons red wine, (optional)
  • 3 cups of grape juice
  • 2 tablespoons of lemon juice
  • 2 tablespoons of sugar (or more, to taste)

Mojito popsicles

  • Juice of 3 limes
  • 6 mint leaves, minced finely
  • 2 tablespoons white rum, (optional)
  • 6 tablespoons sugar (or to taste)

Piña colada popsicles

  • ½ cup diced pineapple
  • 2 tablespoons white rum, (optional)
  • 3 cups coconut milk
  • 6 tablespoons sugar (or to taste)

Preparation

Before you start, make sure you have all the ingredients and utensils ready.

Step 1: Making sangría popsicles

Mix fruits and rum and let it rest in the fridge for an hour.

Combine fruit and rum with grape juice, lemon juice, and sugar to taste.  Pour the mixture into the molds place sticks, and freeze until they are fully frozen (4-6 hours).

Step 2: Making mojito popsicles

Mix lime juice, and mint leaves. Add 3 cups of water, rum, and sugar to taste.

Pour the mixture into the molds place sticks, and freeze until they are fully frozen (4-6 hours).

Step 3: Making piña colada popsicles

Blend pineapple, rum, and coconut milk. Sieve to remove solids. Add sugar to taste.

Top tips

  • Servings may change depending on the size of the molds you have.
  • If you have them, you can add other berries to the sangría popsicles.
  • If you have simple syrup, use it instead of sugar for popsicles that are smoother and don't form ice crystals.
  • If you don't have molds, you can use plastic cups or small glasses and bamboo skewers as sticks.

Lime margarita popsicles

Mix two cups of water, the juice of two limes, 2 tablespoons of tequila, and sugar to taste. Pour the mixture into the molds place sticks, and freeze until they are fully frozen (4-6 hours).
Serve alongside a small amount of kosher salt in case you'd like to sprinkle a pinch on it when serving.

Boozy cherry limeade

Mix 2 cups of cherry juice with the juice of 1 lime, and add sugar to taste and 2 tablespoons of vodka or tequila. Pour the mixture into the molds place sticks, and freeze until they are fully frozen (4-6 hours).

Watermelon chiller popsicles

Combine 2 cups of fresh watermelon juice with 2 tablespoons of vodka and sugar to taste. If you have fresh watermelon, add a piece to the mold before pouring in the juice mixture. Pour the mixture into the molds place sticks, and freeze until they are fully frozen (4-6 hours).

FAQs

Can you freeze alcohol into popsicles?

Adding alcohol will lower the freezing temperature of the water, so we have to be careful not to exceed the amount of alcohol in the recipe --even if tempted-- or they will not freeze. Adding even a bit more alcohol --in my experience-- made them thaw too fast to enjoy.

How long to freeze alcohol popsicles?

How long it takes to freeze alcohol popsicles will depend on the amount of alcohol added, the temperature of your freezer, placement inside the freezer, and the size of the popsicles. It should be frozen in at most 6 hours under normal conditions.

Cocktail popsicles...I love it. Going to try something similar for a rum/peach soda cocktail I accidentally discovered last week.
