Crispy Air Fryer or Oven Fried Potato Wedges - Broasted Potatoes

Much better than deep-fried, these air fryer or broil roasted potatoes are lighter, and, in my opinion, much more flavorful. Broasted potatoes go great with roasts. Maybe you'll try this air fryer or oven-fried potatoes if you are feeling like French fries for dinner but want something lighter or to avoid frying.

Why I ā¤ļø it

If you have wondered how to cook fried potatoes in the oven, I've found that to get the soft creamy center, and crispy crust of French fries, broasted potatoes (broil roasted) work wonderfully and prevents them from over-drying.

I also love that it adds some extra flavor to these baked fried potatoes, and you can experiment with other herbs and / or spices, and see what you come up with. They also make the best side dish for roasts, chicken, and grilled meats.

Ingredients

  • 2 pounds [0.91 kilograms] of large floury potatoes, see notes
  • 2 teaspoons of salt
  • 6 cloves of garlic
  • ¼ cup of olive oil, or melted butter (may need extra to grease the baking tray)
  • 1 tablespoon of dry dill, finely minced, or two sprigs of rosemary
  • 1 teaspoon of minced parsley (optional, or use other herbs of your choice)
  • 1 teaspoon of paprika
  • 1 teaspoon of freshly-cracked pepper
  • 1 teaspoon of garlic powder
  • ¼ teaspoon of baking soda
  • Some fresh herbs for garnishing

Preparation

Before starting, please make sure you have all the ingredients and utensils ready.

Step 1: Peeling the potatoes

Peel the potatoes and cut into wedges (halve, then cut the halves into thirds).

Step 2: Boiling the potatoes

Boil the potatoes adding the salt and the garlic cloves to the boiling water. The potatoes should be cooked but still firm.

Once the potatoes are tender (check with a fork), remove the potatoes and garlic cloves from the water, place them in the bowl, and let them come to room temperature.

Step 3: Seasoning the potatoes

To season the potatoes, add olive oil, dill (or rosemary), paprika and 1 teaspoon of salt, 1 teaspoon of pepper, garlic powder, and baking soda to the potatoes.

Stir to mix everything well until the potatoes are coated in oil and seasonings. Try to keep the wedges intact.

Step 4: Roasting potatoes

Roast the potatoes using one of these two methods:

Air frying:

To cook in the air fryer, place the potatoes in the air fryer pot, keeping the wedges as far apart from each other as possible. Cook in the air fryer preheated to 400 ĀŗF [200 ĀŗC], or 16-20 mins or until golden brown. You may need to turn them midway to cook them evenly.

Oven roasting:

To cook in the oven, spread over a baking tray previously greased or lined with parchment paper, keeping the wedges as far apart from each other as possible.

Broil until the wedges are golden brown (about 5 minutes). Take them out of the oven and turn them. Broil until golden brown on the top side.

Step 3: Serving

Remove from the oven or air fryer and garnish with some fresh sprigs of herbs. Serve immediately, at their crispiest.

Variations

You can make this dish with sweet potatoes slices instead of potato wedges, but I would suggest switching to onion powder instead of garlic powder.

Top tips

  • Russet are the best potatoes for this dish, but you can also use Yukon gold or Idaho potatoes.
  • You can use either dill or rosemary, the taste is different, but both options are very good.
  • You can substitute Italian seasoning for garlic powder, and for extra crispy, cheesy potatoes, add Ā¼ cup of grated parmesan cheese too.
  • If you wish to cook other vegetables alongside the potatoes, double the seasonings, and add bell peppers cut into large chuncks, or quartered red onions when you are mixing with the seasonings (do not boil the vegetables), and roast together.
  • Check your manual to learn what is an air fryer and how to better use yours safely and effectively.

Serving suggestions

Serve alongside a dip as an appetizer, I highly recommend my avocado mayo, an avocado and sour cream dip or my favorite mayo ketchup pink sauce recipe. You can also serve them as a side dish for your grilled meal. It's great with steak and a chimichurri sauce.
