Ingredients
Beef filling
- ¾ pound minced beef, [0.34 kg]
- 1 tablespoon garlic cloves
- 1 tablespoon onion powder
- 1 teaspoon freshly-cracked black pepper
- 1½ teaspoon salt, or more, to taste, divided
- 2 tablespoon olive oil
- 1 teaspoon hot sauce, or chili powder (or to taste)
- 1 cup tomato sauce
- 1 cup leftover white rice, (check our white rice recipe)
- 1 tablespoon minced cilantro
Tomato sauce for cooking
- 2 cups minced tomato sauce
- ½ teaspoon garlic cloves
- ½ teaspoon oregano powder
- ½ teaspoon salt, or more, to taste
To assemble
Avocado sauce
- 1 cup homemade avocado sauce, (see recipe)

Preparation
1. Seasoning the meat
Season the beef with garlic powder, onion powder, one teaspoon of black pepper, and 1½ teaspoon salt. Mix to combine well.
2. Making the stuffing
Heat oil to medium-high heat, add seasoned meat, and cook, stirring, until it browns. Add one tablespoon of hot sauce or chili peppers powder and tomato sauce. Stir. Reduce heat to low and simmer until the liquids have evaporated.Taste and add hot sauce, pepper, and salt to taste, if necessary.
3. Mix rice
Mix in the rice and minced cilantro.Remove from the heat and set aside.
4. Mix tomato sauce for cooking
Season the minced tomato sauce, with garlic powder, oregano and salt to taste.Set aside.
5. Cleaning the peppers
Halve all the Anaheim peppers, leaving the stem. Clean out seeds and white veins. Rinse and set aside.
6. Assembling
Pour into a large pan.Stuff the peppers with the meat mixture and place on the base sauce.
7. Cooking
Cover with a tight-fitting lid. Simmer over low temperature until the peppers have softened but are still firm enough to hold their shape (about 10 minutes). Top with the cheese and let it rest covered until the cheese has melted.
8. Serving
Serve the peppers garnished with cilantro, and with chilled avocado sauce on the side.
Top tips
- Skillet: You'll need a very large skillet or pan to finish cooking this, at least 16" (30 cm) in diameter, or split it into the two largest pans you have.
- Switching herbs: Use parsley instead of cilantro if you dislike cilantro.
- Chicken version: Stuff the anaheim chiles with supermarket rotisserie shredded chicken instead of ground beef for a lighter and faster dish.
- Other peppers: Use bell peppers or cubanelle peppers instead of anaheim peppers for a milder-tasting dish. Or the same number of poblanos or twice the number of jalapeños if you want to spice it up.
- Keto version: Use grated cauliflower or rice cauliflower instead of regular rice for a keto or low-carb version. You can also double the ingredients for the meat and just stuff with the meat alone.
Serving suggestions
This dish goes great with a hearty bean salad. You can make it by mixing black beans, red beans, and sweet corn, and adding olive oil and your favorite taco seasoning.
Some Pico de Gallo salsa goes great on the side too.

Is this spicy? I can't easy spicy food
Anaheim peppers are mildly spicy. You can use cubanelle peppers instead as they're not spicy in the least.
I used only meat without rice because I am trying to eat less carbs. I tworked great. I served it with a salad. I had to cook it in two batches thought because they didn't fit in the pan I have. 😝
