Ingredients

  • 1 medium watermelon, diced: about 6 cups of diced watermelon, plus some watermelon wedges to garnish. You can use ½ quart of watermelon juice if you don't have fresh watermelon.
  • 2 pomegranates, rind removed, and seeds separated: about 1½ cup of pomegranate seeds, you can also use 1 cup of pomegranate juice if you don't have fresh pomegranates.
  • 1 cup of lime juice, you'll need 4-5 limes, depending on their size.
  • ½ cup sugar (white, granulated).
  • 3 cups of crushed ice or ice cubes.
  • ½ quart [½ liter] of carbonated water or club soda.

Before starting, please make sure you have all the ingredients and utensils ready.

Step 1: Blend the fruits

Pour watermelon and pomegranate into the blender vase. Blend to crush the pomegranate seeds.

Strain into a large pitcher, pressing with a spoon to squeeze as much liquid as possible. Discard the solids.

Step 2: Combining juices

Mix the watermelon/pomegranate juice with the lime juice and add sugar (or sweetener) to taste.

Step 3: Pouring

Pour equal portions of the juice mixture into 6 highball glasses.

Add equal amounts of ice.

Step 4: Serving

Pour equal amounts of carbonated water into each glass and serve immediately (before the water goes completely flat).

Garnish with watermelon wedges.

Top tips

  • It's OK that once you add the sparkling water, it is less sweet than you originally intended. It's not supposed to be very sweet. Let the sparkling water, well, sparkle, but if you feel like it may need some extra sugar, go ahead and add more to taste.
  • Make this up to 4 hours ahead of your guests arriving, and keep chilled, but only add the carbonated water when it's time to serve, so it doesn't get flat.
  • You can use simple syrup instead of sugar. For a lighter drink, use agave nectar, or an equivalent amount of sweetener of your choice.

Variations

You can leave out the pomegranate juice if you are not a fan, and just add an equivalent amount of extra watermelon juice, and some extra lime juice if you find you need it (it'll depend on the level of acidity you prefer).

To make a watermelon lemonade, simply use lemon juice instead of lime juice. Orange juice also works great in this drink.

If you want to turn this from a watermelon mocktail to a cocktail (no judging), stir in ½ cup of vodka, tequila, or white rum (they all worked great), right before adding the ice and serving.

Serving suggestions

You can also garnish it with lemon wedges, or add some pomegranate seeds to it for extra fanciness.

To fancify your watermelon cocktail, even more, you can also decorate it with lime slices, and even add frozen watermelon cubes to it.

This looks delicious- a great way to finish off the season with some delicious watermelon! I definitely feel the same way during the summer- just don't feel like making anything labor intensive or anything that takes and time and effort to make. I can't wait for fall too!

I love this! I'm always looking for ways to flavor my carbonated water. I have the SodaStream seltzer maker at home, and I don't like artificial sodas, but I love things like this - drinks with real fruit juices in them. Thanks for this recipe 🙂
