  • Large bowl
  • Large skillet

Ingredients

  • 1½ pound ground pork, [0.7 kg]
  • 2 tablespoons olive oil
  • 1 red onion, chopped
  • 3 cloves garlic, minced
  • ¾ cup tomato sauce
  • ¼ cup pitted green olives, sliced
  • 1⅓ teaspoons salt, or to taste.
  • ¼ teaspoon ground black pepper
  • ¾ pound potatoes, [0.35 kg] wash, peel and cut into cubes
  • 1 red bell pepper, chopped
  • ½ tablespoon hot sauce, or to taste
  • 1 tablespoon parsley, chopped

Preparation

1. Brown the pork

  • Browning the pork.
    In a large skillet, heat the oil over medium-high heat.
    Add the pork and cook, stirring until all the liquid has evaporated and the meat is lightly browned.

2. Cook the onion

  • Cooking the onion.
    Add the onion and garlic, and cook, stirring, until heated through and the onion begins to turn translucent.

3. Add vegetables

  • Adding vegetables.
    Add tomato sauce and 1 cup of water, and mix well. Reduce heat to medium-low and cover with a lid. Cook until it starts to boil (5-7 min).
    Add potatoes, bell pepper and olives. Add ½ teaspoon salt.

4. Cooking potatoes

  • Simmering.
    Simmer covered until potatoes are cooked-through (about 15 minutes).
    Season with salt and black pepper, and hot sauce to taste.

5. Serve

  • Pork picadillo served.
    Remove from heat and stir in parsley.
    Serve hot.

Top tips

  • Serving: One kilo of ground beef (2.5 lb) serves about 6 servings.
  • Ground beef picadillo: Try the traditional picadillo recipe if you want to try a more complex and more traditional recipe.
  • Reuse leftovers: You can use leftovers to make empanadas, or fill meat pies.
  • Store leftovers: You can freeze leftovers in an airtight container and freeze for up to one month.

Serving suggestions

This is a dish that goes great with White rice, but you can also serve it with corn tortillas, or flour tortillas in tacos, with cilantro lime rice, or you can fill empanadas with the leftovers.

Fried plantains or Fried sweet potatoes are also a fantastic side dish if served with rice.
