Ingredients
- 1½ pound ground pork, [0.7 kg]
- 2 tablespoons olive oil
- 1 red onion, chopped
- 3 cloves garlic, minced
- ¾ cup tomato sauce
- ¼ cup pitted green olives, sliced
- 1⅓ teaspoons salt, or to taste.
- ¼ teaspoon ground black pepper
- ¾ pound potatoes, [0.35 kg] wash, peel and cut into cubes
- 1 red bell pepper, chopped
- ½ tablespoon hot sauce, or to taste
- 1 tablespoon parsley, chopped
Preparation
1. Brown the pork
In a large skillet, heat the oil over medium-high heat.Add the pork and cook, stirring until all the liquid has evaporated and the meat is lightly browned.
2. Cook the onion
Add the onion and garlic, and cook, stirring, until heated through and the onion begins to turn translucent.
3. Add vegetables
Add tomato sauce and 1 cup of water, and mix well. Reduce heat to medium-low and cover with a lid. Cook until it starts to boil (5-7 min).Add potatoes, bell pepper and olives. Add ½ teaspoon salt.
4. Cooking potatoes
Simmer covered until potatoes are cooked-through (about 15 minutes).Season with salt and black pepper, and hot sauce to taste.
5. Serve
Remove from heat and stir in parsley.Serve hot.
