If you're looking for a new, great one-step chicken dish to serve, this simple lemon and garlic chicken recipe will make you fall in love with your new favorite dinner recipe.

Chicken, sweet potato, carrot, and magical garlic and lemon flavors. This is a very flexible dish, so you can use chicken breast in lieu of thighs, and add more vegetables if you so wish.

The lemon and garlic sauce is a surprising combination of sweet, sour, and tangy that's also easy and quick to make. The chicken is marinated in it, and the vegetables bathe in the released chicken broth and sauce, absorbing all the flavors.

Ingredients

Garlic lemon sauce / marinade

  • ½ cup lemon juice, (or ¼ cup lime juice + ¼ cup of orange juice)
  • 2 tablespoons brown sugar
  • 2 tablespoons garlic powder
  • ¼ cup ketchup
  • 2 teaspoon salt
  • 1 tablespoon of freshly-cracked black pepper

For the chicken and veggies

  • 1 large white onion, cut into cubes
  • 2 bell peppers, cut into cubes
  • 12 chicken thighs, or 12 drumsticks
  • 2 cups of peeled and cubed sweet potato
  • 2 cups of peeled and cubed carrots
  • Some chopped parsley, rosemary, or fresh thyme to garnish.

Preparation

Before starting, please make sure you have all the ingredients and utensils ready.

Step 1: Making the sauce / marinade

Mix all the sauce ingredients for the sauce (lemon juice, brown sugar, garlic powder, ketchup, salt, and pepper).

Step 2: Season the chicken

Place chicken thighs in a bowl and stir in the onion and bell pepper. Add the sauce mixture, moving around until the meat is coated with the sauce.

Cover and marinate for at least two hours in the fridge.

Step 3: Cooking

Heat the oven to medium-high heat (350 ºC [180 ºC]).

Place the sweet potatoes and carrots in a baking pan. Put the chicken legs (and onion and bell pepper) on top of the vegetables, and drizzle everything with the sauce in which the chicken marinated.

Roast for 30 minutes or until the chicken is cooked through and lightly golden.

Step 3: Serving

Remove from the oven and sprinkle with fresh herbs.

Top tips

  • Line the bottom of the pan with aluminum foil for easy cleaning later on if you use a metal baking pan.
  • You can save the leftovers in the refrigerator for up to 2 days in an airtight container.

Serving suggestions

You can also garnish it with lemon slices and wedges, but it's a simple one-pot dish that requires nothing else for a full meal.

This chicken dish goes great with this mango habanero salsa, or drizzled with some of of my favorite sauces.

Variations

If you feel particularly adventurous, add some chunks of fresh pineapple to your vegetable mix. Yes, it tastes divine.

You can also add more vegetables. Broccoli or zucchini go great with the flavors in this dish.

You can make this dish with boneless skinless chicken breast, but add 3 tablespoons of butter or olive oil to the marinade because it would be otherwise too dry.

For the homemade sauce you have 1/2 cup water and toward the end of the ingredients you have 1/2 water agua. I am confused. Why is there water without any measurement? Is this a mistake? Thank you.
