This pineapple and coconut limeade drink makes summer easier to survive and enjoy! What makes pineapple with coconut taste so good? Well, this is the quintessential tropical combination, and it's made even better by adding lime.

Why I ❤️ it

Limeade is one of my favorite drinks, so easy to make, and so refreshing. Every summer I make it my mission to spend as little time in the kitchen as possible.

Coming up with new and improved ways to keep us from going up in flames is my life mission, and refreshing, ice-loaded drinks are one of them. Who can resist a tall glass of icy-cold coconut limeade? Imagine how much better it can get if you add pineapple to it.

Ingredients

  • 2 cups diced pineapple, see notes
  • ¾ cup sugar, (or more, to taste)
  • 4 cups of coconut water
  • Juice of 4 limes
  • 2 cup ice cubes
  • Pineapple and limes to garnish, (optional)

Before you start, make sure you have all the ingredients and utensils ready.

Step 1: Blending

In the blender vase, combine pineapple, and sugar. Blend until it's liquefied.

Strain mixture to get rid of undissolved solids. If you are making it to serve later, do this step, and continue the later steps before serving.

Step 2: Crushing ice

Add lime juice, ice cubes, and rum (if you choose to use it).

Blend to crush ice to your preferred consistency. It can be made into smaller ice chunks or slushy.

If you want to make it before guests arrive, follow the first step, and chill covered for later. Complete steps two and three when it's time to serve it.

Top tips

  • Fresh pineapple is preferable.
  • If you don't have fresh pineapple, use unsweetened pineapple juice, or adjust the amount of sugar to your preference.

Serving suggestions

Decorate it with some pineapple wedges and lime slices. You can also use some cherries for extra color.

Variations

A limeade is a limeade. It's a beverage that almost anyone can make. Where I've made changes is in adding pineapple to it, and making it a slush for extra refreshment. I have also made two other versions to cater to everyone's tastes.

Coconut limeade slushies

If you can't find some coconut water, use 4 cup of coconut milk (2 cans of coconut milk) and blend it with the ice until it has the consistency of a slushie for an extra tropical touch. Instead of limeade, you can instead use homemade lemonade.

Coconut, pineapple, and lime vodka cocktail

To serve as a cocktail, add white rum or vodka (½ cup white rum, or vodka, or more, to taste) makes for a great summer treat for grownups, and is easy to have ready in a few minutes. You can switch the sugar and coconut water for cream of coconut cream for a thicker drink and extra coconut flavor.

Adjust the amount of rum / vodka to your taste.
