I love the gentle sweetness of the watermelon and the strong flavor of feta cheese in this amazing feta and watermelon salad recipe. Add to that the crunchiness of pistachio and the crispness of iceberg lettuce, and let's not forget the honey-dijon dressing that makes this a dish to remember!

Ingredients
For the salad
- 1 small seedless ripe watermelon, peeled and cut into 2.5 cm/1-inch chunks
- ½ cup of crumbled or diced feta cheese
- 2 iceberg lettuce, shredded
- A handful of minced curly parsley
For the honey and dijon dressing
- ā cup of olive oil
- ½ teaspoon of Dijon mustard
- ½ teaspoon of honey, (optional)
- 4 tablespoons of rice vinegar
- ½ teaspoon of salt
- ½ teaspoon of freshly cracked black pepper
- ½ teaspoon of freshly cracked black pepper
- ¼ cup of roasted, peeled, salted pistachios, then chopped
Preparation
Before starting, please make sure you have all the ingredients and utensils ready.
Step 1: Making the salad
In a large bowl or serving platter, combine watermelon, feta cheese, lettuce, and parsley, and toss.
Tip: If you are not serving it immediately, cover it and keep it in the refrigerator until it's time to serve.
Step 2: Making the dressing
Combine olive oil, mustard, honey, vinegar, salt, pepper, and parsley. Blend with an immersion blender, and process until all the ingredients are mixed thoroughly. Chill until it's time to serve.
Step 3: Serving
Right before you serve the salad, sprinkle it with pistachio, whisk the dressing, and drizzle over the salad.
Top tips
- Although a bit wasteful, you can use a melon baller to make watermelon balls instead of cutting them into cubes.
- Once out of the fridge and drizzled with the dressing, serve the salad as soon as possible (no more than an hour); otherwise, the watermelon will get mushy.

My favorite substitute for pistachios in this salad is hemp hearts. Bonus: it adds a ton of nutrition too.
If you cannot find seedless watermelon, use regular watermelon and make sure to remove as many of the seeds as possible.
Some popular fresh herbs additions to this salad are fresh basil leaves, fresh mint leaves, and shaved cucumbers (or cut into thin slices).
Another quick dressing that goes great with this salad is a mixture of extra virgin olive oil, and balsamic vinegar (or lemon juice) with salt and pepper to taste.
