Ingredients
For the salad
- 1 small seedless watermelon, or ½ large one, peeled and diced
- ½ cup of crumbled feta cheese
- 2 iceberg lettuce, shredded
For the honey and dijon dressing
- ⅓ cup of olive oil
- ½ teaspoon of Dijon mustard
- ½ teaspoon of honey, (optional)
- 4 tablespoons of rice vinegar
- ½ teaspoon of salt
- 4 sprigs of curly parsley
- ¼ cup of roasted, peeled, salted pistachios, then chopped
Preparation
Before starting, please make sure you have all the ingredients and utensils ready.
Step 1
To make the salad, mix watermelon, feta cheese, and lettuce.
Tip: If you are not serving it right away, cover it and chill until it's time to serve.
Step 2
To make the dressing, combine olive oil, mustard, honey, vinegar, salt, and parsley. Blend with an immersion blender, and process until all the ingredients are mixed thoroughly. Chill until it's time to serve.
Step 3
To serve the salad, sprinkle it with pistachio, and drizzle with the dressing.
Variations
My favorite substitute for pistachios in this salad is hemp hearts. Bonus: it adds a ton of nutrition too.
If you cannot find seedless watermelon, use regular watermelon and make sure to remove as many of the seeds as possible.
Top tips
Once out of the fridge and drizzled with the dressing, serve the salad as soon as possible (no more than an hour), otherwise the watermelon will get mushy.
