Why I ❤️ it
I love the gentle sweetness of the watermelon and strong flavor of feta cheese in this amazing feta and watermelon salad recipe. Add to that the crunchiness of pistachio, and crispiness of iceberg lettuce, and let's not forget the honey-dijon dressing that makes this a dish to remember!
The gentle sweetness of the watermelon works very well with the saltiness and tartness of the feta cheese, and the chilled ingredients are so refreshing a summer meal that you'll be adding this to your summer favorites forever and ever.

Utensils and tools
- Immersion blender, or blender
For the salad
- 1 small seedless watermelon, or ½ large one, peeled and diced
- ½ cup of crumbled feta cheese
- 2 iceberg lettuce, shredded
For the honey and dijon dressing
Before starting, please make sure you have all the ingredients and utensils ready.
To make the salad, mix watermelon, feta cheese, and lettuce.
Tip: If you are not serving it right away, cover it and chill until it's time to serve.
To make the dressing, combine olive oil, mustard, honey, vinegar, salt, and parsley. Blend with an immersion blender, and process until all the ingredients are mixed thoroughly. Chill until it's time to serve.
To serve the salad, sprinkle it with pistachio, and drizzle with the dressing.
My favorite substitute for pistachios in this salad is hemp hearts. Bonus: it adds a ton of nutrition too.
If you cannot find seedless watermelon, use regular watermelon and make sure to remove as many of the seeds as possible.
Once out of the fridge and drizzled with the dressing, serve the salad as soon as possible (no more than an hour), otherwise the watermelon will get mushy.
If you're looking what to do with the rest of the watermelon, don't miss this watermelon mocktail recipe.
On summer days we only serve two meals every day (and perhaps a small, cold snack if we feel like it). Dinner time is usually BBQ al fresco. This is perfect salad to go with BBQs and cookouts.
