I love the combination of spices in the marinade, and they're all favorites of mine: ginger, garlic, pepper, and, to add an unexpected touch to it, honey.
The result is colorful shrimp brochettes, with sweet, sour, and spicy flavors that will make you a cookout legend in your family.

Utensils and tools
- 12 skewers (metal or bamboo)
- Grill or stovetop grill
Ingredients
Marinade
- ¼ cup minced fresh ginger
- 3 minced cloves garlic
- 1½ tablespoons of minced fresh cilantro
- 4 tablespoons of honey
- 4 tablespoons of lime juice
- ½ habanero or jalapeño pepper, minced (optional)
- 1½ teaspoon of salt
- ½ teaspoon of freshly-cracked black pepper
- 2 tablespoons of sesame oil or olive oil
For the brochettes
- 36 tiger jumbo prawns (large tail-on shrimp) peeled and deveined
- 2 large red onion, cubed
- 1 bell pepper, cubed
- 2 dozen cherry tomatoes
- Spray oil to grease grill grate

Preparation
Before you start, make sure you have all the ingredients and utensils ready.
Step 1: Mixing marinade
Combine all marinade ingredients (ginger, garlic, cilantro, honey, lime juice, jalapeƱo, salt, black pepper, and olive oil) in a bowl. Stir and set aside.
Step 2: Making brochettes
Skewer a cherry tomato, a jumbo shrimp, some onion, another shrimp, a couple of bell pepper cubes, another shrimp, and another tomato.
Repeat to make 12 of these.
Bathe the skewers with the marinade. Let them rest covered in the fridge for at least two hours.
Step 3: Grilling
Heat the grill over medium-high heat. Spray the grill with a mist of spray oil. Place the skewers on the grill, and cook until the shrimp are pink on the bottom side and the vegetables are just a bit charred (about 5 minutes).
Flip and cook the same way on the side. Remove from the heat.
The process is the same whether you use a gas, charcoal, or stovetop grill.
Step 4: Serving brochettes
Remove from the grill and serve right away.
Top tips
- If you want a milder garlic flavor, you can use a tablespoon of garlic powder instead.
- For a mileder spicy touch, add a teaspoon of chili powder, paprika.
- I used half a green one and half a yellow one for visual interest, you can do that, or use just one color.
Serving suggestions
You just need a nice salad to serve with these shrimp en brochette, try this summery watermelon and feta salad, or this fava bean salad.
Some grilled vegetables or grilled pineapple also go great witht them.
