LEMON GARLIC MARINADE – ½ cup lemon juice (or ¼ cup lime juice + ¼ cup of orange juice) – 2 tablespoons brown sugar – 2 tablespoons garlic powder – ¼ cup Ketchup – 1 tablespoon salt – 1 tablespoon pepper (freshly-cracked, or ground) FOR THE CHICKEN CASSEROLE – 1 white onion (large), cut into cubes – 2 bell pepper , cut into cubes – 6 chicken thighs , divided into halves, or 12 drumsticks – 2 cups batata (sweet potato), cut into cubes – 2 cups carrot , cut into cubes
Place chicken thighs in a bowl and stir in the onion and bell pepper. Add the sauce mixture, moving around until the meat is coated with the sauce. Cover and marinate for at least two hours in the fridge.
