Instructions
To make the chickencracker toppings
Step 1: Sautée
In a skillet, heat the oil over medium heat. Add the shredded chicken, garlic, onion, and bell pepper and cook, stirring, until the onions and bell peppers are soft and cooked through.Add oregano and pour in the tomato sauce and parsley, and cook, stirring until everything is heated. Season with salt and pepper to taste.
Step 2: Cutting cheese
Using a cookie cutter, cut the cheese into 12 small circles (about the size of the crackers); if you don't have a cookie cutter, just cut the cheese into squares.
Step 3: Serving
Arrange chicken, cheese, crackers, parsley, and sour cream on a tray. Right before eating, assemble by placing cheese on a cracker, topping with chicken, followed by a small dollop of sour cream, and sprinkle with parsley. The cheese will prevent the cracker from becoming soggy with the chicken juices but it is best not to pre-assemble it. Step 2: Prepare avocado
Dice the onion and the tomato. Peel and chop the avocado. Mix with the onion and tomato.Season with pepper, salt, and lime juice to taste. Chill.
Step 3: Serve
