1½poundof fresh lobster tail meatcut into bite-size pieces
⅓cupdry white wineany dry white wine works, I suggest an inexpensive Sauvignon Blanc, for example
½cupof fresh basilchopped
1poundof pasta shellsor penne
1teaspoonof pepper(freshly-cracked, or ground)
½teaspoonof chili flakes(or more, to taste)
Instructions
Step 1: Soak the tomatoes
Soak the dry tomatoes in abundant water for an hour. Remove from the water and squeeze to remove excess water.
Step 2: Heat
Heat the olive oil over very low heat in a large skillet.Add the dry tomatoes, olives, ¼ tablespoon of salt, and garlic. Cook over low heat for about 3 minutes, stirring occasionally.
Step 3: Boil the pasta
In the meantime boil the pasta according to the instructions in the package, adding a tablespoon of salt to the pasta water.
Step 4: Cook
Add the lobster tail and chopped basil to the tomato mix. Cook until the lobster meat has become white (about 5 minutes).Add the wine and cook until everything is heated through. Check and season with salt and pepper to taste.
Step 5: Serving
Drain the pasta, and add it to the skillet. Stir to mix and serve right away.Sprinkle with chili flakes, Garnish with basil leaves.

Any dry white wine works, I suggest an inexpensive Sauvignon Blanc, for example.
