Instructions
Step 1: Make oat milk
Blend the oats and 2 cups of water in a blender until the oats are dissolved (about 5 minutes at high speed). You can sieve to remove solids with a fine-mesh strainer.
Step 2: Combine ingredients
Return the oat milk to the blender and add the remaining ingredients. Blend until the mixture has turned pink, leaving some small pieces of strawberry.
Step 3: Freeze
Pour into popsicle molds, add the sticks, and leave in the freezer until they set.To remove them from the mold, dip them in lukewarm water for a couple of seconds to loosen the popsicles.
Cook's notes
While oats are naturally gluten-free, it may be challenging to find oats that have not been contaminated. You can use coconut milk or almond milk instead.
Substitute sweetener to taste (like agave or maple syrup) for sugar.
If you just have instant oats, you can also use it but may need to use about half as it dissolves faster into the milk. This isn't necessarily an exact recipe, adjust things to your own taste as you go along.
If you don't find fresh strawberries, use frozen strawberries, you do not need to thaw them.
