WHOLE WHEAT AND BANANA SUGAR-FREE PANCAKES

If you love bananas as much as I do, then how can you resist this banana pancake recipe? It makes fluffy, soft, and fresher-than-ever banana pancakes, and the whole stack of pancakes disappears in minutes.

– 2 very ripe banana, peeled and crushed or chopped – 2 medium eggs – ½ cup whole wheat flour or oat flour – ¼ cup almond milk (or cow's milk) – ½ teaspoon baking powder – ¼ teaspoon salt – Oil spray for greasing (or melted butter) – 1 cup fruit, fresh berries, or pecans or walnuts to garnish – Honey or maple syrup to serve (optional)

Ingredients:

Mix mashed bananas, eggs, flour, milk, baking powder, and salt. Blend to a smooth mix.

Step 1:

Coat a non-stick pan with oil (or brush with butter) and heat to medium temperature. Add four tablespoons of the banana mixture and cook until it's brown on one side. Flip and cook similarly on the other side.

Step 2:

Repeat with the rest of the mixture. Serve warm with garnish of your choice.
