SWEET AND SOUR SLAW

I love red cabbage, and I especially love cooked red cabbage. This easy recipe for a sautéed red cabbage sweet and sour slaw is one of my favorite ways to serve this colorful vegetable.

– 8 ounces bacon [227 g] – 1 large yellow onion sliced thinly – ½ purple cabbage shredded finely – ¼ cup apple cider vinegar – 2 tablespoons white granulated sugar – 1½ teaspoon salt (or more, to taste) – 1 teaspoon freshly-cracked black pepper (or to taste)

Ingredients:

Cook stirring until the edges are browned (3-5 minutes).Heat a skillet over medium-high heat and once heated add the bacon to it.

Step 1:

Stir in the onion and cook stirring over medium heat until the onion turns translucent (about 2 minutes).

Step 2:

Season with salt and pepper to taste.Stir in the cabbage and sauté until it is heated through (about 1 minute).Pour in the vinegar, salt, and sugar and cook stirring for another minute. The cabbage should be slightly wilted but still have some bite to it.

Step 3:

Serve at room temperature. Put extra vinegar on the table for those who prefer it more sour.
