Dinner is served! Rubbed with fresh garlic and infused with lemon, this chicken is savory, crunchy, and ridiculously easy to cook. Make a lemon garlic chicken one-pot meal with chicken, sweet potatoes, carrots, and a lemon garlic marinade. This easy chicken casserole recipe is cooked in 30 minutes.

GARLIC LEMON SAUCE / MARINADE – ½ cup lemon juice  – 2 tablespoons brown sugar – 2 tablespoons garlic powder – ¼ cup Ketchup – 1 tablespoon salt – 1 tablespoon black pepper  FOR THE CHICKEN AND VEGGIES – 1 white onion (large), cut into cube – 2 bell pepper , cut into cube – 6 chicken thighs or 12 drumstick – 2 cups sweet potato  cut into cube – 2 cups carrots , cut into cube – Some chopped parsley, rosemary


Mix all the sauce ingredients for the sauce (lemon juice, brown sugar, garlic powder, ketchup, salt, and pepper).

Step 1:

Place chicken thighs in a bowl and stir in the onion and bell pepper. Add the sauce mixture, moving around until the meat is coated with the sauce. Cover and marinate for at least two hours in the fridge.

Step 2:

Heat the oven to medium-high heat (350 ºC [180 ºC]). Place the sweet potatoes and carrots in a baking pan. Put the chicken legs (and onion and bell pepper) on top of the vegetables, and drizzle everything with the sauce in which the chicken marinated. Roast for 30 minutes.

Step 3:

Remove from the oven and sprinkle with fresh herbs.
