– 2 cups of breadcrumbs or panko – ½ tablespoon salt – ¼ tablespoon freshly ground black pepper – 1 tablespoon garlic powder – 1 tablespoon of onion powder – 8 slices of turkey legs, clean of small bones (see notes) – 4 eggs (large), whisked – 1 cup of all-purpose flour – ¼ cup of vegetable oil or ghee (clarified butter) at room temperature – Lemon or lime wedges, for garnishing (optional)

In a large mixing bowl, combine panko, salt, pepper, garlic powder, and onion powder and stir to combine.

Step 1:

Cover the turkey chops with flour and shake off the excess. Drench each turkey chop in the egg wash (use tongs to dip them into the egg). Cover them with the breadcrumbs. Set them aside.

Step 2:

Heat the oil in a skillet or pan over medium-high heat. Place turkey chops in the hot pan in a single layer and cook until they turn golden brown on the cooking side. Using tongs, flip and cook the other side.  Remove the turkey from the pan and place it on paper towels to remove excess oil. Serve them.
