DELICIOUS RED CABBAGE

This easy recipe for a sautéed red cabbage sweet and sour slaw is one of my favorite ways to serve this colorful vegetable.

– 8 ounces bacon, [227 g] – 1 large yellow onion, sliced thinly – ½ purple cabbage, shredded finely – ¼ cup apple cider vinegar – 2 tablespoons white, granulated sugar – 1½ teaspoon salt, (or more, to taste) – 1 teaspoon freshly-cracked black pepper, (or to taste)

Ingredients:

Heat a skillet over medium-high heat and once heated add the bacon to it. Cook stirring until the edges are browned (3-5 minutes).

Step 1:

Stir in the onion and cook stirring over medium heat until the onion turns translucent (about 2 minutes).

Step 2:

Stir in the cabbage and sauté until it is heated through (about 1 minute). Pour in the vinegar, salt, and sugar and cook stirring for another minute. The cabbage should be slightly wilted but still have some bite to it. Season with salt and pepper to taste.

Step 3:

Serve at room temperature. Put extra vinegar on the table for those who prefer it more sour.
