I placed a second order of same PC a week or two later. The first order I chose two pounds (received 3 lovely chops w/o tenderloin attached - they were great), scroll down. This order I placed for one pound (hoping to receive two chops of a medium to thick-cut). What a received was one mastodon chop. Really. Straight out of the Flintstones. One single humongous (with tenderloin portion attached) chop that really should be called a roast for two/or 3. Not having a bandsaw I was stuck with either cooking this like a roast or deboning it so I could halve its thickness (keep tenderloin separate). I decided to roast. Mistake. While the tenderloin was tender it had an off-taste (no idea why) but it was all I could eat at first serving. Refrigerated, reheated in air fryer the next day. Darn it was dry. Like the sahara. Ate about half the chop, diced the leftover, soaked in tamari in fridge to throw in rice tonight While I am still a fan of this, my advice is go for a 2lb order. You will probably get 3 chops. You need 4 chops? well go for 3lbs and put some in fridge. Don't chance with a 1lb order (unless you have a bandsaw)
Second meat order for delivery and very happy with it (the first was truly wonderful beef ribeye). My only point off was this didn't seem terribly fresh. Not gone over at all but not firm enough, lost a lot of water in package, just a whiff here or there a little off. I had tried to get a qty of 2 chops so guessed at what that might weigh since you order by pound. Ended up with three chops. I can only eat one for a serving (and these were big) so I froze the other two and prepared the one with some good old shakenbake. It cooked up nice, still juicy, no off flavor and quite tender. Would buy again. Will probably try one of the other two prepared differently. I think just some simply seasoning, a good sear in a pan and then into the air fryer to finish off and serve with the au jus from searing and a little worcestshire. The one i had definitely was not dried out so I don't think the s&b is really necessary. Will update how that one goes when I get to making it.
