El resultado de este tipo de pan suele ser m&aacute;s ligero y esponjoso. El gluten es como el andamiaje del pan. <\/p>\n\n\n\n<p>Sin gluten es muy dif&iacute;cil obtener el tipo de textura que define a algunos tipos de pan.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Amasar<\/h2>\n\n\n\n<p>Parece sencillo, pero amasar tiene sus trucos. Como regla general, el amasado debe hacerse lentamente. Empuja la masa con la parte de la mano que se une a la mu&ntilde;eca, doblando lentamente la masa sobre s&iacute; misma. Cambia de direcci&oacute;n cada pocos movimientos.<\/p>\n\n\n\n<p>Amasar demasiado es tan malo como no hacerlo lo suficiente. El punto perfecto se alcanza cuando la masa tiene la consistencia de la plastilina y no se pega a la mano ni a la superficie de trabajo. La levadura convierte los az&uacute;cares de la harina en alcohol y gases, cuyo efecto es la \"subida\" del pan. <\/p>\n\n\n\n<p>No hay que subestimar la importancia de la levadura en la calidad del pan. Si la levadura est&aacute; \"muerta\", la masa no subir&aacute;. La levadura que ha permanecido demasiado tiempo en los estantes del supermercado puede no estar en condiciones &oacute;ptimas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Prueba de la levadura<\/h2>\n\n\n\n<p>Para comprobar si la levadura est&aacute; viva, calienta un poco de agua a unos 105 &ordm;F [40 &ordm; C] -no deber&iacute;a estar ni siquiera caliente al tacto- y a&ntilde;ade un poco de az&uacute;car. A&ntilde;ade la levadura; si empieza a producir espuma en un minuto, es que la levadura est&aacute; viva. <\/p>\n\n\n\n<p>Una reacci&oacute;n lenta puede significar que la levadura est&aacute; parcialmente muerta. A la levadura le resulta m&aacute;s f&aacute;cil \"digerir\" el az&uacute;car que has a&ntilde;adido que el az&uacute;car presente de forma natural en la harina; una reacci&oacute;n lenta significa que la reacci&oacute;n en presencia de la harina no ser&aacute; adecuada.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tipos de levadura<\/h2>\n\n\n\n<p>Hay varios tipos de levadura. Las m&aacute;s comunes son la levadura seca y la levadura de subida r&aacute;pida. El primero es m&aacute;s fuerte pero m&aacute;s lento y debe disolverse en agua caliente antes de a&ntilde;adirlo a la harina.<\/p>\n\n\n\n<p>Como regla general, no utilices m&aacute;s de una cucharada de levadura por cada libra de harina; si supera esa cantidad, el pan puede acabar teniendo mal sabor. Si la levadura es fresca y de buena calidad ser&aacute; suficiente.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Temperatura<\/h2>\n\n\n\n<p>Como cualquier organismo vivo, la levadura tiene su temperatura y condiciones preferidas. Reacciona mejor en lugares c&aacute;lidos, h&uacute;medos y oscuros. En un d&iacute;a fr&iacute;o, la masa puede tardar m&aacute;s en subir.<\/p>\n\n\n\n<p>Lo que hace que la elaboraci&oacute;n del pan sea tan intimidante es que se trata de un organismo vivo con sus propias necesidades. Esto puede dificultar el seguimiento de una receta al pie de la letra.
